BurgerBeefed Up Pitts-Burger

Ingredients:

1 Lb ground beef

3 Tablespoons Worcestershire Sauce

2 teaspoons chopped garlic

2 teaspoons chopped shallots

2 teaspoons chopped fresh Italian Parsley •¼ teaspoon garlic salt •¼ teaspoon season salt •Pinch cayenne pepper

1 teaspoon + 1 pinch of black pepper

5 Tablespoons olive oil

3 Sourdough hamburger buns

3 Tablespoons mayonnaise

3 teaspoons Dijon mustard

3 slices tomato

1tsp diced jalepenos

2 tbsps Crumbled Feta cheese

Toppings:

Pre-made coleslaw

French fries

Directions:

In a large glass bowl combine ground beef, Worcestershire sauce, garlic, shallot, parsley, garlic salt, season salt and cayenne pepper, and feta cheese.

Add 1 teaspoon black pepper; mix well. Take one-third of meat mixture, roll it into a ball, then pat it down into a patty. Repeat to make two more patties.

In a sauté pan heat olive oil over medium-high heat. Add patties to pan. When one side is cooked half-way through, flip the burgers so the other side can cook.

Open 3 sourdough buns and spread 1 tablespoon mayonnaise and 1 teaspoon mustard on each bun. Sprinkle with a pinch of black pepper.

Place a burger on the bottom of each bun. Add desired burger toppings and the tops of the buns.

Mac & CheeseNo Bake Macaroni and Cheese (with Shrimp)

Ingredients:

1 pound elbow macaroni

8 ounces smoked Cheddar, shredded

8 ounces sharp Cheddar, shredded

8 ounces mild cheese, such as Velveeta, shredded

2 cups half-and-half

2 cups milk

1/2 teaspoon kosher salt, plus more to taste

Pinch garlic salt

Pinch pepper

1tsp olive oil

2 pounds shrimp – tails off

Directions:

Cook the macaroni according to the package directions. Drain and reserve.

Reserve 2 tablespoons each of the smoked Cheddar, sharp Cheddar and mild cheese to sprinkle over the macaroni and cheese at the end.

Combine the half-and-half, milk, 1/2 teaspoon kosher salt, garlic salt and pepper in a large pot and place it over medium-high heat. Bring to a low boil and gradually whisk in the remaining smoked Cheddar, sharp Cheddar and mild cheese, stirring to make a creamy sauce.

Mix in the macaroni and season with kosher salt to taste. Pour into a baking dish and top with the reserved smoked Cheddar, sharp Cheddar and mild cheese.

Saute shrimp in a hot pan with 1 tbsp olive oil, kosher salt, and pepper. Saute one minute until shrimp becomes opaque. Use as a topping or fold into macaroni along with the cheese.

Cook 30 minutes, makes 6 to 8 servings

BrowniesTouchdown Brownies with Caramelized Walnuts, Cream Cheese Frosting and Mint

Ingredients:

2 sticks unsalted butter, plus extra to rub on parchment paper

Four 1-ounce squares unsweetened chocolate

1 1/2 cups sugar

1 cup all-purpose flour

1 cup crushed pecans, walnuts and almonds

2 teaspoons vanilla extract

4 eggs

Vanilla ice cream, for serving

Toppings:

Mint leaves & cream cheese frosting

Cream Cheese frosting:

1 pkg.  (8 oz.) PHILADELPHIA Cream Cheese, softened

¼ cup  butter or margarine, softened

1 tsp.  vanilla

1 lb.  powdered sugar (about 4 cups), sifted

Frosting directions:

Beat cream cheese, butter and vanilla in large bowl with mixer until well blended.

Add sugar gradually, beating until well blended after each addition.

Directions:

Preheat the oven to 350 degrees F.

Bring a pot of water to a boil and place a metal bowl or double boiler over it; make sure the bowl is not touching the water. Add the butter and chocolate squares to the bowl and stir until melted. Pour the melted chocolate into a large glass bowl. Add the sugar, flour, nuts, vanilla and eggs, and mix well.

Line a 13- by 9- by 2-inch baking dish with parchment paper. Rub the parchment paper with butter to prevent sticking. Then pour the brownie batter into the dish. Bake until a wooden toothpick inserted in the center comes out clean, about 30 minutes. Remove the brownies from the oven.

Use the parchment paper to lift the brownies from the baking dish. Cut into bars. Serve warm with vanilla ice cream and drizzle with Caramel Sauce. Garnish with additional toppings as desired.
